Roma Saleyards Tour

Time: No bookings are required, simply meet at the Bull Ring area at 8.15am for an 8.30am tour kick off.
Roma Saleyards are the largest cattle selling facility in the southern hemisphere, seeing over 350,000 cattle a year. Selling occurs every Tuesday morning, and are an incredible sight to see! Tours are available on sale days free of charge. Please note that there is no cattle sale on Easter Thursday however tours will still be held.

Up the Creek Garage Museum

Warm up for Easter in the Country and enjoy a morning of fun. Dance with the Animals and meet some of your favourite country animals and listen to some wonderful story telling.

Fiona will also conduct a book signing after the story for those who would like to have their new book signed by the author.
11:00 am Dance like an Animal – Keely Johnson and Friends
The program is based around several iconic Aussie animals, with big personalities, and a collection of songs that share their stories. That collection of songs became an album, and that album became an ARIA #1 hit. With tracks featuring some of Australia’s biggest talents including 2008 Australian of the Year, Lee Kernaghan, there was little doubt that people would embrace the record. Keely has built an interactive concert around the album, and the whole gang is on the road to Roma for Easter.

As part of a signature Terra Firma dining experience, guests will be treated to an open fire pit installation with delicious local produce slowly roasting over the hot coals. French chef Charly Pretet has mastered this humble style of dining and embracing back to basic cooking techniques, using only fire and the best local beef Roma has to offer. The combination of the delicious aromas and the ability interact with the Chefs at work make for an unforgettable show.
You will experience food at it’s best with the following menu items:
Hung and slow roasted beef long ribs rack
Homemade chimichurri sauce
Whole pig cooked on the cross over the open fire pit
Served with greek style yoghurt sauce
Coal roasted whole pumpkin, burnt balsamic dressing, fetta, rocket, pepitas
Smoked green and red cabbage and grilled vegetables slaw, burnt citrus dressing.
Smoked Queensland pineapple basted with honey and served with dulce de leche and cinnamon crumble.
The night will be further enhanced by the presence of Roma’s own Western Queensland’s first small-batch, hand crafted distillery servicing cocktails and samples of their individual products.
